Chef Demos at the 2017 San Luis Valley Potato Festival in Monte Vista, CO.
Chef demos have been a longstanding tradition at the San Luis Valley Potato Festival. This year ACFCCA chefs Greg Sever, Kevin Clarke, Klaus Krebs and JP Krause continued that tradition by performing the demos to an attentive crowd. The chefs each showed their tips and techniques for using Colorado potatoes in their favorite ways, engaging and interacting with the audience. They were also treated to an experience like no other: a tour of the potato fields and rare opportunity to pick test-market potatoes. This family friendly and true farm to table experience was appreciated by both the chefs and attendees.

The ACF Colorado Chefs Association graduated the highest number of apprentices in one class on August 21st, 2017. The graduates came away with college credit, jobs, and their certification as a Sous Chef.
Attendees celebrating the graduation dined on a three-course dinner prepared by Chef Danny Flanagan CEC CCA, Chef Christopher Moore of The Club at Ravenna, and the first year apprentice class. Some of the samplings consisted of Grilled Flatbread with White Bean puree with seared Colorado Lamb, a Frisee salad with soft-boiled egg, watermelon radish and sherry vinaigrette, and Steak au Pouivre and Salmon with a whole grain mustard cream. The dinner ended with dessert consisting of a trio of Crème Brulee.

The ACFCCA annual golf outing sponsored by Italco Foods, Inc, is one of our most anticipated events. We have many different ways to get involved in the golf outing, from foursomes to sponsorships, to volunteering time and or talent. It’s a fantastic way to get the word out about your company or a new product, and the networking opportunities are endless. Additionally, all proceeds of the tournament go toward our Education Fund. Annual participation at Telluride Bluegrass Festival.
The Telluride Bluegrass Festival has been a longstanding tradition in the picturesque town of Telluride. The ACF Colorado Chefs Association has proudly participated in the festival for eight years running. This year several of our ACFCCA chefs stepped up to go above and beyond, building a brand new structure, driving, loading, and unloading trucks and doing whatever was needed to make this event successful. The ACFCCA participation at the Telluride Bluegrass Festival raises awareness of our organization and money for our Education Fund.
2017 Colorado Agriculture Day at the Colorado State Capitol: Promotion of Colorado Lamb, Colorado Potatoes, Red Bird Farms, Colorado Beef, Polidori.
The ACF Colorado Chefs Association is honored to be chosen to partner with the Colorado Agriculture Council to bring “Ag Day” to fruition. The event is anticipated each spring at the Colorado State Capitol and is wildly popular, especially amongst the hungry capitol team members.
Each year, our ACFCCA chefs are paired with farmers, ranchers and legislators to produce a tantalizing Colorado Proud dish. The chefs must use a previously chosen Colorado Proud ingredient to highlight in their dish. Colorado Beef Council, Colorado Lamb Council, Colorado Potatoes, Colorado Eggs, The Vegetable Growers Association, Polidori Sausage, and Red Bird Farms are just a few of the Colorado Proud ingredients the chefs use for their creations.
The largest Presidents Awards Dinner, attended by over 400 guests, hosted at Stanley Marketplace.
The 2017 Presidents Awards was the largest and most exciting yet. Held at The Hangar at the newly opened Stanley Marketplace, we had over 400 guests in attendance! Once an aviation manufacturing facility of the original ejection seat, the Stanley Marketplace now serves as a retail and dining epicenter and the perfect location for our Presidents Awards Dinner.
At the 2017 awards ceremony, we honored President Chef David Lewis, owner of Miette et Chocolat and welcomed incoming President Scott Smith, PhD, CCE, CEC, Johnson & Wales University, and the 2017 Colorado Culinary Honorees. Our top Colorado chefs and ACFCCA Apprentices, along with their chef instructors, provided an outstanding menu for the large crowd of members and their guests.

Our January chapter meeting is at the National Western Stock Show and is sponsored by the Colorado Beef Council. In 2017 famed animal behaviorist and professor of animal science at CSU, Temple Grandin, spoke to a standing room only crowd. Additionally, our chefs in attendance received certification credits for attending this sought out event.
